I answered part of your question in this message. The benefit is that it contains white flour which is very low in IF.

For a detailed explanation of sourdough bread see web page. The only difference between sourdough and other breads is the yeast is wild yeast instead of packaged yeast that is grown on flour and water. As you can see from the recipe on the sourdough web page there is no reason for sourdough bread to contain dairy -- but sometimes it can.

It is important to read the labels on all the foods you purchase.
