If you are following the EFI diet closely and aren't eating any red meat I would not be concerned witht the amount of iron in other foods. It is essential to consume enough iron to maintain healthy red bloods cells and thus overall health. Also, anemias can take months to develop since our bodies store the iron it consumes and will use up iron stores if there is not enough consumed through food. Remember that our bodies do not absorb all the iron that we consume either. From the everage diet, 10-15 mg of iron is consumed but only about 1mg of this is absorbed because most of the iron we need is recycled from old red blood cells that are broken down after their life span to make new ones. If your body doesn't need it from your food, it doesn't absorb it.
