I got my original idea for preparing the Tilapia from this post, but I really disliked the taste of the fat-free italian dressing. Instead, this is how I make it...
If frozen, thaw tilapia (see my note below). I just use a tiny amount of olive oil (you could just brush a little on your fish before cooking or put a very little bit in the skillet). Place filets in a non-stick skillet over med heat. Sprinkle with Old Bay seasoning and a little ground Cumin. Cook for 3-4 minutes. Flip and sprinkle a little Old Bay on the other side, too. Cook for another 3-4 minutes or until fish is cooked through (flakes easily). That's it! Super easy and DEEELICIOUS!! Best served with Jasmine rice.
Note: I buy a big bag of frozen tilapia from Sam's. The filets are individually wrapped, so I can get out just the amount I need. I thaw them, still in their plastic, in the sink under cool running water.
