mmmm I love beets for IBS, think of beets like carrots, since they're so close. the root part is the SF (the stalks are almost pure IF, just like any other greens). like carrots, you'll want to eat them cooked to be safest, but any way you cook 'em is fine (and if they're canned, they're already cooked). pickled is usually ok for me too.

I've actually never heard of eating beets raw, I'm not sure what that would taste like but maybe it's good?
