Whoops, I over-tomato-d myself

Well, most of us know that although tomatoes are healthy for us to eat b/c of the lycopene and blah blah..., cooking tomatoes increases their acidity. Even as a novice cook, I remember my mom telling me a few things. One of those, was how a little bit of sugar added to cooked tomato sauces or tomato-based foods could help neutralize the acidity of the tomatoes.

Tomatoes are IF and we shouldn't completely eliminate them from what I understand from Heather's books. However, it appears that while trying out recipes from the recipe index and also trying new ones that contain cooked tomato, I seem to have overdone it. I don't ever remember having gone overboard eating tomatoes! LOL I'm not as much a raw tomato fan unless they are chopped up nicely in a salad or and I like the raw tomatoes in salsa.

You know how sometimes our palates change as we grow older? As one of many, many examples, I remember hating vegetable juice (V8). As I grew older, I kept craving tomato juice but would try it and want to gag. My grandmother had a juicer and would try to get my sis and I to drink carrot juice (bleh! was my opinion then). Now I find myself still craving V8-type juices or other blended fruit and veggie drinks. Except this time, if I buy the V8 in the small cans, I actually like it quite a bit. It's probably b/c it's a smaller serving and I drink it kinda fast. I checked the ingredients on the V8 and from my own experiences w/my body and my knowledge of food nutrition, and then add into the equation my IBS-C, V8 seems to be a good IF source for me.

So, to make a long story finally end (sorry guys and gals), I think I better back off on the cooked tomatoes for awhile and see how things go.

I woke up this morning feeling pretty decent. I had a small serving of Gerber Rice Cereal w/bananas (I drink it from a mug sometimes, hehe) and took my meds and had leftover tea from last night. Soon, I think I'm gonna wake up the BF and have him cook me some egg beaters, turkey bacon (if it hasn't gone bad yet), and hash browns. I know it's not very LF, but most of it's cooked on a griddle or in a non-stick pan, which helps.
