Delayed reaction to wheat?

I've been avoiding wheat - but not all gluten - for 2 years now and overall not any better for it. So I decided that this summer I woud go back to it and see how I felt. Well i've been having bites here and there and was fine, so then worked up to half a bagel and was fine. Today I ate closer to a whole bagel (can you guess what food I missed most?) and was fine. No reaction at all. 10 hours later my stomach started to cramp up badly. Now, it could be yet another ibs attack - but the cramps feel a little more severe somehow and I have a lot of gas which I get sometimes but not always. I wish I could tell if it was the wheat or if I would have felt like crap tonight no matter what. Ugh, I'm going back to the bathroom!
