What do you do when you have picky eaters at home?

I have been and IBS "survivor" for 14 years. I have 2 children (daughter and son) of my own and now a step son. The sons are very picky eaters and are hardly willing to try anything different or out of the ordinary. I love to cook when I have the time and the energy. Currently I am on medication for my symptoms which seem to not really be doing the trick. I want to regulate my IBS with diet and have already ordered Heather's book. My question is...how do I get the kids (my husband is willing to try new recipes to help me) to even try adjusting to substitute foods instead of cooking 2 different meals? This may be impossible, but any advice would be helpful.
