Need to learn how to maintain weight

Everytime I do this diet, I lose a considerable amount of weight, and I am already thin enough as it is. I would just like some advice on how to really learn to maintain weight. I know it has to do with eating more and counting calories, but I really have a problem with quantity. I can't eat too much at all, and I start to bloat. I can barely have a half a serving of food at one time. ..Would it be easier if I just start eating foods that are higher in fat or something?? I know arrowroot crackers are good, one gram of fat each, but I need more. ..And maybe tips as well, because I've also been exercising more then I used to. Thanks! Means a lot.
