Wow, Beth--just take a stroll in that dark leafy area of the produce department and try something new! Swiss chard is a favourite of mine. Herbs have tons of iron, too. Radicchio rocks--I love to grill it in combination with romaine hearts.
I love arugula and will often mix or substitute it for spinach in one of my crazy green "Popeye" pesto sauces--it has a nice peppery quality to it. The neat thing about pureed greens is that you can "hide" them in a lot of stuff, as well.

I tried kale last week--it was so yummy. I recommend blending this one as it can be rough.

I'm not sure which I love best, though--swiss chard or spinach. Swiss chard, I think, is sweeter--especially the red. Beet greens are yummy, too.

I'm not fond of collards, though.

Sea-veggies have tons of iron, too--but they are high in IF, so be cautious.

Kate, IBS-D.
