After introducing new foods, I have swollen eyes and symptoms again.

I have IBS-C, gas, bloating constipation.
First week of eating rice, chicken, rice cakes and puffed rice I felt terrific. When I started introducing new foods, I started not feeling well again. Also, waking up with swollen and puffy eyes. Should I go back to just eating what I ate the first week? Is it healthy to do that forever, since I felt so good at that time? When I am not on any type of diet, I get these symptoms but not as bad, I guess because my body is used to consuming more foods, and I don't realize how bad I really am on a day to day basis off a diet. After the first week on diet, I see a drastic change but then introducing new foods, I feel worse since not used to consuming them after one week on diet. Does this make sense?
