Still can't handle any insoluble fiber or fats...

I have had IBS for a year now, was officially diagnosed 2 months ago. I found this website 4 months ago and have been faithfully following the IBS diet guidelines since then, have both Heather's books, etc. I started improving immediately with the diet changes, but it still took a month for the diarrhea to stop even on all soluble fiber. Once I got over that (by cutting out all fat content) and started adding in insoluble fibers, I switched to constipation. I'm taking acacia 10 grams per day (1 tsp 5x/day), and have not missed a day of my 30-minute work-out. I have lost 57 pounds so far, which is nice. However, I have not had any luck adding in ANY insoluble fibers, even following the guidelines. I have been very scientific in adding new foods so that I know what is causing the problem...I wait until I've had a "normal" BM two days in a row, then add one new food. Then I will become either constipated or loose, and will go back to soluble fiber only until I have another normal BM. Any insoluble fiber makes me constipated/bloated , and any fat content higher than 1/2 gram per meal gives me diarrhea and gas--plus pain with either situation. With Heather's recipes, I have had to modify even further to eliminate all oil, as even the peppermint fudge cake was a problem with that small amount of oil. It has been four months now and I'm just wondering if this is normal, or if I should have been able to add in more foods by now. I'm getting about 100 ounces of water per day...not sure if I should try increasing the acacia again...any suggestions would be appreciated!!
