Ok, so it's not exactly balanced on its own, but beans and rice together are fabulous! This is a simple recipe for beans and rice - http://www.fatfree.com/recipes/beans/beans-rice - if you're iffy on the corn, just leave it out. More bean recipes than you can shake a stick at: http://www.fatfree.com/recipes/beans/ If you puree canned beans, you can make a dip like hummus, which you can put on chips with salsa to make nachos. You can also add other things, like rice, and turn them into vegetarian burgers. Pureed seasoned chickpeas, made into patties and baked, are sorta-falafel.
