I trained for a major long distance bike ride last year and I had to count calories.. a) I made sure to get 6 at least 200 calorie meals/snacks in... b) I ate a lot of high caloric foods.. muffins, quick breads, pasta, sweets, etc.. along with plenty of proteins in chicken and fish and soy...

One warning- vegan dairy subs often still ahve cassein or whey and if you are sensitive to them you need to avoid them anyway.
