Hey,
I also love baked sweet potatoes...I eat them with sauteed tofu or tempeh and something green like chard or spinach. Soup is always a good bet too, and requires almost no preparation. I'm C too, and when I get nausea or pain, I find the bananas go down really well...in the morning, I like to slice them over cereal and unsweetened soymilk. Experiment with grains like polenta and quinoa, which are healthy, quick, and easy to cook. Another lifesaver for me is Wildwood soy yogurt, which is cultured so that it has all the healthy bacteria that helps your tummy, and comes in the little to-go containers, or the big tubs. Also, like others said, when nothing else sounds good, peanut butter always goes down smooth for me, as long as I eat it on bread or crackers.
