Oh Beth! I'm so sorry you're going through all of this. I think it was easier for me to eat wheat products because they NEVER triggered my IBS before the positive bloodwork, so I always had a feeling like celiac wasn't right for me. Still, I was paranoid about avoiding it. I wouldn't kiss my boyfriend if he had any wheat, I even traveled to Vienna, Athens, & London last yr...taking a bag of food with me...and losing 10 lbs. It was horrible.
After the surgery, I gave it ago...I had some bad days at the beginning (but I am SURE it was the stress). My body has reacted very well to wheat. I'm lucky... still, with your gallbladder issues, one doc said it can be positive bloodwork wise if something else in your is swollen. My gallbladder showed chronic inflamation, even though it looked fine on the CT scans... so I don't know.
Still, its a decision that has to come with time and ease...the stress of it could send you in another attack.
Ok...so as for how to make your VERY difficult decision. It's hard... the first time I ate some bread, I thought my heart was going to FALL out of my chest. All of us here just want to do/try ANYTHING if it'll make us feel better. I know if you were more stable, you'd jump right into this and hope for the best...but while feeling ill and worrying about the belly, it is so hard. I seriously suggest you write down pros and cons, weigh the options... if you can accept to try small amounts, give yourself a HUGE pat on the back. Don't think it's silly...be proud for making a decision. If you feel good by that little step, take a little bigger step the following week. I really want you to trust your body! I know it's hard...but feeling better is the most important part...don't push until you are good and ready! Hope this helps..hang in there!
btw--I looked up the bread I ate while on a celiac diet--and guess what? it wasn't safe..it had nonfat dried milk and whey in it! (big ooops!!)...I loved it--the GF Pantry favorite sandwich bread...so don't listen to me about that! Sorry!
