You mentioned your tired of plain bread. Once in a while I use egg whites or egg beaters and make french toast with maple syrup or dark karo. My DH fav is egg, sausage, cheese on english muffin. Of course mine doesn't have the sausage, cheese or yolk but I do love it. I bought those little round things to cook the eggs in so it fits the muffin.
