Sorry to hear how much your husband must be suffering! I hope you find the information helpful on this site. Is the IBS diet your husband following the Eating for IBS Diet that's outlined and explained on the main site? Heather's guidelines are easy to follow, but I would think you'd just have to minimize or leave out the protein sources from the recipes for your husband.
I'm not familiar with diets for kidney stones, but how about simple vegetable soups? Or well-cooked vegetables with rice? For example, is it possible to leave out the legumes from those vegetarian recipes you mentioned?
Gluten shouldn't be a problem unless he's been diagnosed with celiac disease or a gluten intolerance. Not eating regularly, not getting enough SF and nutrients, will make IBS symptoms worse.
