I just wanted to thank you for your response.
I have been sooooo overwhelmed by all of these food intolerances...(these are new to me; I am 38 and have NEVER had a food intolerance in my life - except Ceasar Salad would send me straight to the bathroom!
I find it hard to deal with all three of these intolerances at once...especially the gluten! Wheat flour is in everything in the grocery store!! All crackers, cookies, pastas, even store bought stews!
I am baking a Sweet Cornbread loaf right now but am using Potato flour. I have substituted rice flour for some of the breads, like the Lemon Bread, and it doesn't turn out at all. The batter for the cornbread was really runny. I hope it turns out!
I wanted to ask you if you could literally tell me what you eat most days. Perhaps I could get some other tips from you, as dealing with all three of these issues is incredibly overwheming. I have been reading alot of books, this website, and other websites as well, but to find info. on all three problems is very difficult.

P.S. On top of it all, I need to lose about 40 pounds. All this bread, potatoes, etc., seems overwhelming, (and fattening). Any suggestions? I had lost 76 lbs. on the South Beach Diet program in a year with exercise, but I think those days are sadly over.
