Hello Gluten free folks,

I know that it seems overwhelming at first. I just keep sight of the fact that I am feeling better, less pain, bloat , chance of future disease etc. Also you don't eat junk when you eat this way, it will keep you healthier.

Here are some meals: cooked rice cereal with banana and soy milk for breakfast, or egg white omelette with veggies and tapioca bread toast or english muffin and jam, or rice waffles with applesauce and low fat chicken sausages.

Lunch or dinner: chicken rice and veggies, or turkey burgers with oven baked french fries and zuccini, salmon with veggies and wild rice(I get the real wild rice, not a mix and have no problem). Sliced turkey cutlets, a bit of cranberry, baked yam, carrots.

Last night I had Pad Thai noodles from the Thai restaurant with chicken and shrimp. (rice noodles)

Desserts I have : banana, or rice dream ice cream, or low fat, low sugar gluten free apple pie I got from Whole Foods, or banana bread I make myself with acacia fiber. If I am stable I can have an apple or other fruit. I eat very little sugar so this isn't a problem for me.
