I am also GF by choice, well sorta. I am wheat intolerant and also gluten. Not technically allergic but my guts puff up and I fart a LOT! I am very much dairy intolerant. So, how do you cope? It's a lot of trial and error. Most HFS have a great pre-packaged selection. Keep it simple to start with and then build. You can even buy your own GF bread. Rice milk is great (or soy, depending on your tastes!) White rice flour is the best catch all substitute. I'd be happy to help as I can. -------------------- IBS-C with major bloat!
