Amaranth is wonderful! I am gluten intolerant, so I've tried every non-gluten grain/mock-grain on the market. It is a very good breakfast food with soy or rice milk. You can also mix it with quinoa or millet for a more substantial meal because the grains are so tiny. Just make sure you cook it thoroughly or it will be hard on the teeth. When it's fully done it should be very easy to chew...just keep giving it water until it gets there.
