I love to cook, but often don't have time to do so during the week. Still, I've been eating safely for a while now. You can definitely do it without spending hours cooking or using weird, expensive ingredients.

Try sticking to some easy basic things, like rice, pasta and potatoes. Then experiment with topping them with various safe toppings: veggies, tomato sauce (if you can handle it), soy cheese. I put beans, salsa and soy cheese on top of potatoes. Some of those rice and pasta boxed mixes can be safe too, if they don't call for milk (or you can use soy) and if their fat content isn't too high. I also eat a lot of veggie burgers during the week. (Try morningstar's chik patties. Yum!)

You can definitely do this and your tummy will thank you. Don't get discouraged. Good luck!
