Parsnips are Great!

Parsnips are nothing like a potato. It's a carrot with a kick! I love them. One way I like to prepare them is to cut them into french-fry sized sticks, brush them with olive oil, sprinkle with salt, and then oven roast for 20 minutes or so in a medium oven (350). Turn once during cooking.

They also make an excellent puree. Boil them until tender and then send them through a food mill, then mix with some bouillon and seasonings. You may even want to experiment with fake cheese.

Trust Emeril on this. The best chefs know how to do well by a parsnip.
