Yes, I know what you mean feeling like you have limited choices and ALWAYS having to read the ingredients because they might have changed. There are some good, safe choices, however, out there you could try.
Morningstar now offers a Vegan Griller, which is like a meatless, dairyless hamburger. As far as chicken or chik'n (fake chicken) is concerned, I avoid anything breaded (patties, chicken nuggets) because it most likely contains milk.
I've been buying bags of Tyson's frozen (uncooked) chicken tenderloins, which are white meat and low-fat, skinless, unseasoned, and easy to prepare (about 35 minutes if frozen, 20-25 minutes if thawed).
