Well, I looked up the nutritional info. on the fitday site. 1 c. chicken liver has 217.97 calories, 7.51g fat, 33.82g protein. Therefore, 68.13 calories of the 217.97 are fat calories. Eeeek. It's a tad high, percentage-wise being slightly more than 31% fat. Maybe, though, if I had a small serving combined with lots of SF/IF? It's actually quite similar to the fat ratio of salmon, for example (i.e. canned). I suppose, in consideration of a total day's intake, it would balance out.
It would be really good with mushrooms.
