What about a recipe like this: Tofu Mango Stir Fry With Pasta
Servings 4 Ingredients 1/2 lb. capellini pasta 1 tbsp. sesame oil 1/2 tsp. cumin 1/8 tsp. hot chile paste 1 medium onion, sliced 2 cups mushrooms, sliced 1/2 cup firm tofu, diced 2 celery stalks, thinly sliced 2 cups red and green peppers,julienned (if you can tolerate) 2 cups cabbage, sliced (if you can tolerate) 1 1/2 cups firm ripe mango, diced 1 tbsp. lime juice 1/2 lb. bean sprouts 2 tbsp. soy sauce 1/4 cup roasted, unsalted peanuts or cashews
Directions Cook pasta according to directions. Pre-heat wok or skillet over high heat. Add the oil, onion and spices, cooking until onions soften (2 to 3 minutes). Add mushrooms, tofu and celery. Cook for another 2 to 3 minutes. Drizzle mango with lime juice and add along with cabbage and peppers. Simmer covered for 3 to 4 minutes, stirring twice. Add noodles, sprouts and soy sauce, toss. Add nuts before serving
