Re: Burpiness from salad dressing       09/14/05 11:16 AM Edit Reply Quote Wind Reged: 04/02/05 Posts: 3178 Maybe it's the XANTHAN GUM--prepared salad dressings contain different "gums," etc. It could have also been the propylene glycol alginate (derived from kelp). Some contain microcrystalline cellulose (i.e. fatfree or Hellman's Ultra). The one I used didn't contain carageenan or the microcrystalline cellulose--it was just Kraft fatfree! Yes, in retrospect, I honestly believe it was the "Xanthan gum!" (an emulsifier/stabilizer) What do you think? Kate. Print     Remind Me     Notify Moderator
