More BM's = More Pain

Good morning everyone.
Wanted to throw out some symptoms here and see if anyone else can relate-
If a food is going to cause cramps etc and promote more frequent BM's how long does this usually take.
It seems like if I eat something I shouldn't- I don't pay immediatley for my boo-boo, but 2 days later. If I eat something today that I know doesn't sit well- like watermelon, cantaloupe, grapes, peas, beans, beets- It won't cause me pain until Sunday. I will have loose bm's (not D) and frequent ones. And this causes pain- As soon as I pass stool my insides feel good- but then 5/10 minutes after a bm they hurt all over again. Doctor says this is the heightened sensitivity to the peristalysis that moved the stool.
Oh and I mostly do not have to strain to have a BM.
Any input would be appreciated. Just want to make sure that this is somewhat normal.
