And, your mom's a nurse, you say? I wonder if she treats her patients at the hospital the same way as she treats you? I just can't imagine not listening to what your child is telling you about his/her physical condition and not trying to help them. So sorry you can't talk her/them into understanding your situation. Wish I could do something to help. (late thought: did you check all the cupboards for plain oatmeal or cream of wheat? sometimes they stash stuff like that in the back of other things if they're not used very often.
