Hey Amy, I'm so sorry your new diet isn't helping. I'll have to admit, when I first started cooking GF I thought the bread was foul because it was so crumbly and stale so I stopped eating anything that would traditionally contain gluten. I've now found a company that makes really nice GF rolls (they're called The Gluten Free Baker) and they're not the least bit crumbly and taste really fresh. Very filling though, I find rice flour is very dense so you can't eat as much of it.
On the other hand I've made some really yummy GF muffins, problem is you need to add quite a bit of nuttlex (DF butter) or oil to stop them from being crumbly. They taste delicious!!! But after all the expense of cooking GF you also end up eating foods with more fat then someone with IBS can handle (I do fine, but others may not).
Sigh, so what is a helpless IBSer to do?? I found when I first did the vega diet I lived off fresh foods quite happily: brown rice, cooked veges, chicken, fish, bananas, mangos and snacked on rice crackers. I was happy enough with that diet at the time because I was feeling SOOOOOOO good. But you get sick of behaving so well after a while.
I hope you start to feel better soon!! Geez that must suck, behaving so well food wise, and still feeling crappy You poor thing.
