4 o'clock attack: help

I swear every week it's something new with my stomach! Lately, every time I have a little snack around 4 (it doesn't matter what it is) I start to feel constipated, can tell I need to have a BM but can't and I get gassy! Pretty huh?! Any ideas why this is happening. I've been trying to take a fiber supplement with whatever it is. Even if I only have something small it happens. Is it best not to eat when this happens or still make myself have dinner? What should I have? Yesterday I just had some oatmeal with soy protein powder and some apple. This is just so frusturating. In the beginning when I started tthe diet in March I couldn't believe the change in my BM (sorry for the details) and now no matter what I can't get that back. It's seems like I start something it works and then my body adjusts and shuts down. Any thoughts?

Also, why do I sometimes get abdominal cramping out of no where and it lasts all day. Yesterday it came on around 10 AM and I drank tea ALL day but nothing worked. These were the first symptoms years ago before the C and now the cramping seems to be back.
