I've found that mine was predominantly stress, but eating a safe diet still helps in the long run, by not forcing your body to digest foods that are irritating to the GI tract. (There are a lot of foods - red meat and dairy, for example - that are even irritating to people without IBS, they just don't ever notice it or attribute the problems to something else.) Besides, think of it this way: the IBS diet is how EVERYONE should be eating for good health, so you're avoiding future problems by eating well. But that's all beside the point.
For the stress part, unfortunately, the only thing I found that helped was anti-anxiety medication. I don't know how you feel about meds, but I tried therapy and stress-reduction techniques and didn't have much luck. Meds WERE NOT a 100% cure, but they've been a vast improvement.
