Good for you for getting a second opinion. It is critical that you get a proper diagnosis as IBS mimics several other things. Carrots are a really good place to start. They cook well, are mashable which makes them very tolerable. REmember, cook, mash, peel and puree should be your mantras for now. The more of these 4 you do the better you will be able to tolerate them. Try some well cooked and pureed tomato sauce. That's another good starting point. Add a bit of sugar to reduce the acidity of the tomato sauce.
