I generally make my own gluten free bread, which uses baking powder (bicarb & cream of tartar) to help the bread to rise. I can also buy whupper bread, which is yeast free & wheat free rye bread. But I did hear there was a subsitute yeast, which sounds like your dough enhancer. Sometimes you just can't beat the texture of a loaf made with yeast. Sigh... if its not one thing its another! Good to hear I'm not the only one tho! Thanx for your reply
