I eat Heather's Guacamole all the time and I even eat a half avocado with a little lemon juice occasionally. I always eat the guacamole with lots of Baked Tostitos or with flour tortillas and the plain avocado as part of a meal, so the soluble fiber cushions the fat content.
I really do believe that there are different triggers for different people, although some are more universal than others. That does mean adding new foods can be confusing, but not adding new foods gets awfully boring. I'd say try a little bit of the avocados you bought - with some soluble fiber - and see how you do.
If you bought lots of avocado, you can freeze the rest of them until you see how you tolerate avocado. Once they're ripe, mash them, add a Tablespoon of lemon or lime juice per avocado, put them in a plastic Ziploc bad, squish them to the very bottom of the bag, sqeeze out all the air, lock the bag, and roll it up. I've done this and the frozen avocado makes great quacamole.
