you don't have a location in your post, so i don't know where you are from but I grew up in south texas, where the food is authentic mexican which is usually high in fat and oil and the tortillas are made from lard. There are a few places that will tell you if their tortillas are made with lard or not. Most places these days, do not have lard tortillas because they don't actually use homemade tortillas, they are usually store bought. So ask.

Also, I usually get grilled chicken fajitas, and ask for them to try to use not much oil. And when they bring me the chicken , if it still looks greasy I dab it with a napkin before I eat it.

I would also be wary of beans, even black beans, just in case they added fat or lard. Again ask them.

But non-lard tortillas and grilled chicken fajitas is usually okay. No condiments. Easy on the lettuce if you can handle it, and obviously no cheese.

But it really really depends on the restaurant, I know some Mexican food restauarants that are okay, and workable, and others that you could not pay me to eat anything at.
