I've learned some tricks for getting more veggies into my kids that I thought I'd pass on, may help some of you who don't tolerate veggies well.
I cook WELL (to mush) and puree in a food processor, fresh fruit and veggies. Then I freeze them in 1/2 cup containers. When I need them for a recipe, they are on hand.
I hide carrots and green beans into meat patties. I know some of you can't do red meat but I make them from 1/2 superlean hamburger and half ground pork. You could use turkey but I hate the taste of ground turkey and so do my kids. I make batches of these at a time and keep them in the freezer, it's our replacement for "hot dogs" or some other fast meat.
We have to be really careful about preservatives and things for my oldest son so I even make my own ketchup for them which is really very easy - just buy organic tomato juice and cook it down till it's thick, add a little vinegar and honey (or sugar or stevia or whatever you use to sweeten). Since my middle son eats ketchup practically like a meal in itself I feel better at least knowing he's basically just eating flavored tomato juice, doesn't gross me out quite so bad watching him shovel it in!!
I use all combinations of pureed pears, apples, carrots, bananas, etc in homemade muffins/breads. They love them.
I add pureed carrots to spaghetti/tomato sauces. Blends right in.
I make homemade popsicles out of plain yogurt (I actually homemake this too but that's another story, it's not IBS diet yogurt but you could use your soy or whatever...). They like them best flavored with some pineapple/mango juice (new from Dole!) and pureed papaya. A little honey will add sweetness. Mix it all well and pour into popsicle molds.
I've tried getting the kids to drink veggie juices but so far no luck.
Well, I was just thinking of this and thought I'd pass these few ideas on as they might help someone else, knowing that many of us here need our fruits/veggies well cooked and pureed wouldn't hurt.
