Rule of thumb: the more mashable a veggy is, the more soluble fiber it has. Cooked carrots vs. cooked broccoli.
Carrots mash easily, brocs don't. Carrots have lots of soluble fiber while brocs are more insoluble. As for us IBSers, cooked is always the preferred way to go. I can tolerate cooked carrots much easier than raw. Cut raw out entirely? Not necessarily. If you love to munch on a raw carrot, fine, as long as you can tolerate it. Chewing throughly helps a lot. It's just easier to digest if cooked. I hope this is all correct.
