I have been eating a vegan diet with the IBS diet for a few months now, I have been on the IBS diet since sometime in April, I think?
Anywho, there are LOTS of things you can eat, but you have to find out what YOU specifically can handle and at what times. I usually do OK with lentils, so they are a protein staple for me, but some people with IBS can't touch them. Lately, my tummy has been funny with insoloubles (not sure why), so I have cut back on them though.
When I try new things, I make sure that I am gonna be home or in a place I am comfortable, with nohting important to do incase I have an attack.
Even if my tummy is alittle funny, tempeh always seems safe, Heather even mentions it in her book, you can get it at Health Food and some regular grocery stores, it is fermented whole soybeans shaped in a flat rectangular patty type thing. I cut it up and use it for stirfrys.
If you do a search for 'vegan', you will get lots of more posts and ideas, I posted a long list of stuff alittle while ago, but I do not remember if it was here or in the lounge, but the topic has come up many times, lots of info! I will spare everyone else posting it again! But , seriously, don't be afraid to use the search feature at the bottom of your screen, type in 'vegan' with no time limits and there you go!
