Buckwheat is an edible fruit seed that is mild in flavor and very soft if UNROASTED. Once roasted (Kasha) it becomes more assertive in flavor and dry and harder to digest in it's whole form. Just like any seed, if it's ground, it's easier to digest, thus buckwheat flour that is used in Soba noodles (usually with wheat flour added) is very easy to tolerate. Buckwheat flour is usually mixed with other flours because it has such a strong flavor.
But in answer to your question, yes, it's very soluble in nature, as evidenced by how fast it absorbs water.
When I first read Heather's 1st year book, the very first food I put to the test was buckwheat pancakes with real maple syrup. (I've been allergic to wheat for many years.) When it didn't cause a cramp one, I knew this way of eating was my answer to the IBS diet dilemma.
(PS...Beth, if you're wondering about the cracked buckwheat in your Bob's Red Mill hot GF cereal, it's fine once it's cooked and absorbes liquid...look at how much liquid it absorbs....oatmeal is water 2:1, but this cereal is 3+:1)
