Hey, had to share this. I'm always trying to sneak veggies into my kids - the boys are 4 and almost 3, and none too excited about eating vegetable as they used to be as toddlers. So anyhow, I'm always experimenting - last night I made oatmeal cookies according to the recipe on the quick oats canister, but got the bright idea that instead of the 1 cup of shortening it called for (yuck) I put 1 cup of canned pumpkin! Do you know they taste REALLY good? The only trouble baking them is that they don't "spread" like a normal cookie would, so you have to not just drop the dough in balls on the sheet, but spread them thin like you want them to end up. Anyway, the boys are eating them and it occurred to me that these are really IBS friendly, not a bit of fat added, only it's probably better for us IBS-C'ers as pumpkin has a good bit of fiber as do the oats.
