Just sayin'... 7 years ago, I experimented with an antifungal diet and am now UC symptom-free/med-free after 8 miserable years. Basically, it's giving up all grains, (including corn) for a time- can add some choice grains eventually, and eating only whole, natural foods (meat/fish/poultry of your choice and tolerance, tolerable veggies (NO potatoes or sweet potatoes-starchy vegs. or not salads for awhile til my gut healed), and lower-sugar fruits like all berries (high antioxidants) and green apples, plain yogurt, NO artificial sweeteners. I also took natural antifungal supplements, b/c sometimes changing diet may not be enough.
Everyone is different, but there is science behind fungus having a link to UC. No guarantees, but may be worth as try if you're sick and tired of being sick and tired. Some people have found much success with going gluten-free, even IBSers. I have been GF since last summer, as I have always had IBS tendancies even with UC. So much better!
