Imus Ranch Very Berry Tofu Compote

This is good served on "ice cream" or on plain cake. It will keep stored in the fridge for one week in a airtight container.

1 lb silken firm tofu, drained
1 cup reconstituted frozen apple juice
2 tsp brown rice syrup
1 tsp oilve oil
1/3 cup fresh raspberries
1/3 cup fresh blueberries
2 tbsp raw unrefined sugar

Combine the tofu,apple juice,syrup and oil in food processor.Process 2-3 minutes stir twice, until smooth. Stir in the berried and the sugar till combined. Serve warm or at room temp.

makes 1 1/2 cups
