Cheese and other substitutes - esp for those who can't have soy!

I know that some of us (me included!) have a lot of problems finding soy cheeses that are completely dairy-free and not insanely priced. (I found soy cheddar at the HFS, for example, and they wanted $7 for a 5-oz block! Uh, no!) Well, I was exploring the message boards at Vegsource, and I found this:

It's a LOT of reading, but if you don't mind spending a little time in the kitchen, it looks like it'll be worth it! I also can't vouch for the fat content of the recipes, but again, use common sense - if it ends up being high-fat and you still want to try it, eat it sparingly.
Just skimming over the post, I saw recipes for marscapone, gruyere, monterey jack, sour cream, cream cheese, yogurt, mayo, parmesan, and endless variations thereof. All of the recipes are nut-based - NO dairy, NO soy.
Also, scroll all the way down to the end of the post, and see her follow-up posts - I haven't read them yet, but she has substitutes for tofu, miso, and more, too.
Got all excited and had to share!
