This is something my mom always made when I was growing up... I just modified it to make it IBS-safe. (Well, it's safe as long as you can do pineapple... but I can, so...)
Sweet and Sour Meatballs serves 4
1 lb ground turkey 1/2 cup dry bread crumbs 1/4 cup soy milk 2 tbsp finely chopped (or coarsely grated) onion 1 tsp salt 1/2 tsp Worcestershire sauce 2 egg whites or Egg Beaters to equal 1 egg 1/2 cup packed brown sugar 1 tbsp cornstarch 1 can (13 oz) pineapple chunks in juice 1/3 cup vinegar 1 tbsp soy sauce 1 small green pepper, coarsely chopped (I always omit this)
Mix together the ground turkey, crumbs, soy milk, onion, salt, Worcestershire sauce, and egg whites. Shape into 20 balls. Cook in a large skillet over medium heat, turning occasionally, until browned, about 20 minutes. Remove meatballs, and if there's excess fat in the skillet (there shouldn't be), drain it off (but leave any brown bits!).
Mix brown sugar and cornstarch in skillet. Stir in pineapple with juice, vinegar, and soy sauce. Heat to boiling, stirring occasionally; reduce heat. Add meatballs. Cover and simmer, stirring occasionally, for 10 minutes. If using green pepper, stir into mixture, cover, simmer until crisp-tender, about 5 minutes. Serve over rice.
