I made a recipe safe a couple years ago and have been using it ever since. Sometimes I increase the amount of cocoa and decrease the amount of sugar porportionally in the mix and frosting to fix those INSANE chocolate cravings.
Brownies
MIX 1/2 cup Soy Garden 1 cup white sugar 2 eggs 2 teaspoons vanilla extract 1/3 cup unsweetened cocoa powder 1/2 cup all-purpose flour 1/4 teaspoon salt 1/2 teaspoon baking powder FROSTING 3 tablespoons Soy Garden, softened 3 tablespoons cocoa powder 2 teasoon honey 1 teaspoon vanilla extract 1 teaspoon soy milk or creamer 1 cup confectioners' sugar 1. Preheat oven to 350 degrees F. Grease a 8X8 inch square pan.
2. Melt 1/2 cup Soy Garden in microwave. Remove from heat, and stir in sugar, eggs, and vanilla. In a seperate bowl, mix cocoa, flour, salt, and baking powder. Combine ingredients, stiring until well mixed -- but careful no to over stir. Spread batter into prepared pan.
3. Bake in preheated oven for 25 to 30 minutes.
4. Frosting Preparation: Combine Soy Garden, cocoa, honey, vanilla, confectioners' sugar, and soy milk. Allow brownies to cool for only 10 minutes, then frost (and eat!).
