One of my mom's favorite things to do is saute up some fresh broccoli, fresh carrots, and cubed chicken breast with onion and garlic, and toss it with pasta & diced fresh tomato (if you can tolerate it). She goes fairly heavy with the olive oil, but I've done it with a tablespoon or less, and you could even use cooking spray and a little water instead. (And, of course, if broccoli isn't something you can eat, substitute accordingly... zucchini would be tasty!)
My faster & simpler - and probably a little more IBS safe - version is an onion or 2, a little garlic, and a big package of fresh mushrooms, sliced... sauteed with cooking spray, no oil, season w/ salt & pepper. Sprinkled with some (soy) parmesan, it's not only good on pasta, but it's REALLY good on spaghetti squash.
If you can handle a bit of olive oil, a friend of mine just tosses her pasta with enough oil to keep it from sticking and a good handful of chopped fresh herbs - parsley, basil, oregano, whatever.
I know these aren't sauces, but I thought I'd throw 'em in.
