Waldorf Rice Salad (Makes 4 servings)
This is a delicious side dish on a warm Summer evening. If the raw veggies make you nervous feel free to use less or omit them, but this amount doesn't bother me. Well, it did tonight, but that's because I was frazzled and forgot to add the rice, therefore not having any soluble fiber with my dinner. So don't forget the rice.
Ingredients: 1 1/3 cups red apple, cored and diced (I use McIntosh) 2 Tablespoons plus 2 teaspoons pineapple juice 2 cups white rice, cooked and cooled (you can also use brown if you tolerate it well, but I use white) 1/2 cup celery, chopped 1/2 cup walnuts, chopped 1/2 cup raisins 1/4 cup carrots, chopped 1/2 cup plain soy yogurt 1/4 teaspoon cinnamon 1/2 teaspoon salt 1/8 teaspoon coriander
1. In a large bowl, toss apples with pineapple juice. 2. Stir in rice, celery, walnuts, raisins and carrots. 3. In a separate bowl, blend soy yogurt, salt, cinnamon, and corriander. 4. Stir the dressing into the apple mixture. 5. Cover and refrigerate. 6. Serve!
