Well, I made the Portuguese Sweet Bread today and used the Butter Buds mixed w/hot water to replace the 1/2 cup of butter originally called for. I replaced 2 of the 3 eggs with egg beaters. Here's what happened. While it was mixing in the bread machine, it was really gooey so I added more flour until it was the right consistency. The recipe makes 24 rolls. It's too much to finish in the machine. Anyway, I made about 24 "birds"--that's when you cut the dough in pieces after the first rise, roll it between your hands to make a hot-dog looking piece of dough, tie it in a knot and use scissors to clip a beak on the high end and cut a few slits in the low end for the tail. Well, when I took them out of the oven, a lot of them had flattened out, but some looked like they needed to go to Wt. Watchers with me! Anyway, I obviously did something wrong. When I tasted one, it was tough and chewey. I may have handled it too much while making the birds or I added too much flour. My husband said they had a nice flavor (and he's Portuguese), but they were tough. So, before I give anyone the recipe, I'll try it again and make some adjustments like cutting the recipe in half and letting it go all the way in the bread machine and see if not handling it makes a difference. Will let you know the outcome. And if any of you master-bakers out there have a clue what happened, please enlighten me! Thanks. Sharon
