My first recipe go... does this seem safe with a few alterations? I found this cause I'm studying Nigerian Drama this semester and I love ginger!
This Nigerian favorite uses two types of prepared ginger, dried ground and crystallized. Serve this crusty cake with vanilla soy ice cream for a complete sweet dessert.
• 2 cups flour • 1 1/2 teaspoons baking powder • 1/2 teaspoon baking soda • 1/2 teaspoon salt • 1/2 cup sugar • 3/4 cup molasses • 6 tablespoons soy butter or margarine • equivalent to 1 egg • 5/8 cup soy milk • 1 tablespoon ground ginger • 4 tablespoons chopped crystallized ginger
Sift the flour, baking powder, baking soda, and salt together. Mix the sugar, molasses, and butter together in a saucepan and heat until the sugar melts and the whole is nicely liquid but not too hot. Mix the beaten egg and milk together. Then add the heated mixture slowly to the egg and milk. Stir in the dry ingredients, mixing well. Fold in the two kinds of ginger.
Bake in a greased 9-inch loaf or round cake pan at 325 degrees F for about 50 minutes, or until it tests done. Allow to cool slightly in the pan, then turn it out on cake rack to finish cooling.
Yield: 6 to 8 servings
